Ingredients
1 cup butter
1/2 cup heavy cream
2 cups all-purpose flour
1/2 cup white sugar
1 cup powdered sugar
1 large egg yolk
1 teaspoon vanilla extract

Method
Begin by mixing together butter, cream, and sifted flour in an electric mixer until the mixture is smooth and well combined. Chill the dough in the refrigerator for about an hour.
Preheat your oven to 375°F (190°C) and generously sprinkle white sugar on a piece of waxed paper.
On a floured surface, take one-third of the chilled dough and roll it out to a thickness of 1/8 inch. Use a 1 1/2-inch round cookie cutter to cut out around 60 wafer shapes. Coat each wafer on both sides with the white sugar, and place them on ungreased baking sheets. Use a fork to prick each wafer four times.
Bake the wafers in the preheated oven for 7 to 9 minutes, or until they are a light golden color. Allow them to cool completely after baking.
While the wafers are cooling, prepare the filling by mixing butter, powdered sugar, egg yolk, and vanilla extract with an electric mixer until you have a creamy consistency. If you like, add food coloring to reach your desired hue.
Once the wafers have cooled, take one wafer and spread a layer of filling on top, then gently press another wafer on top to form a sandwich. Repeat this with the remaining wafers and filling until all are assembled.
