These Swedish Cocoa Bliss Bites are a delightful no-bake treat, combining toasted oats with rich cocoa and a hint of spice, coated in shredded coconut for a perfect sweet snack.
Ingredients
2 cups rolled oats
1/2 cup sugar
1/3 cup cocoa powder
a pinch string salt
1/4 teaspoon cayenne pepper
1/4 cup softened butter
1/4 cup coconut oil
1 teaspoon vanilla extract
1 tablespoon brewed coffee
1 cup shredded coconut
Method
Start by heating a pan on medium heat and adding the rolled oats. Keep stirring for 5 to 7 minutes until they release a delightful aroma and turn a light golden brown.
In a large bowl, mix together sugar, cocoa powder, a dash of salt, a hint of cayenne pepper, softened butter, coconut oil, vanilla extract, and freshly brewed coffee. Blend until smooth and well combined.
Fold in the toasted oats until everything is thoroughly mixed and a dough-like consistency is achieved.
Using a small scoop, form the mixture into bite-sized balls. Roll each one in shredded coconut to coat them generously.
Arrange the coated bites on a parchment-lined tray and chill in the refrigerator for 15 to 20 minutes to set.
