This Sushi Layer Cake is a creative twist on traditional sushi, beautifully layered with flavors and textures. Perfect for gatherings, it combines seasoned sushi rice with a rich cream cheese mixture, fresh seafood, and crunchy veggies, all served with a zesty dipping sauce.


Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces cream cheese
  • 1/2 cup mayonnaise
  • 1 cup crabmeat
  • 1 medium cucumber
  • 1 medium avocado
  • to taste none sesame seeds
  • 1 tablespoon soy sauce
  • 1 tablespoon orange juice
  • 1 tablespoon lime juice

Method

  1. Begin by rinsing sushi rice thoroughly under cold water until the water is clear. In a covered pot, add the rice and water, bringing it to a boil. Once boiling, cover, reduce the heat, and let it simmer for about 15 minutes until the rice is soft.
  2. While the rice is cooking, prepare the dressing by combining vinegar, sugar, and salt in a saucepan. Heat over medium heat until the sugar dissolves, then take it off the heat and let it cool.
  3. In a blender, mix softened cream cheese and mayonnaise until smooth and creamy.
  4. Once the rice is ready, transfer it to a large bowl and drizzle half of the cooled vinegar mixture over it. Gently fold the rice to mix in the flavor. Taste and adjust with more vinegar mixture if desired.
  5. Press half of the seasoned rice into the bottom of a springform pan to create a base layer.
  6. Spread half of the cream cheese and mayonnaise mixture over the rice layer. Add crabmeat, sliced cucumber, avocado, and dollops of cold cream cheese in that order. Top with the remaining cream cheese mixture.
  7. Layer the rest of the rice on top and press down firmly to compact all layers. Sprinkle sesame seeds over the top for garnish. Refrigerate for a minimum of 2 hours to allow it to set.
  8. For serving, combine soy sauce, orange juice, and lime juice in a small bowl. Carefully remove the sushi cake from the springform pan, slice it, and serve with the dipping sauce.
