Ingredients

  • 1 medium onion
  • 3 tablespoons flour
  • 4 cups vegetable broth
  • 2 medium potatoes
  • 2 cups corn
  • 1 cup half-and-half
  • 1 medium bell pepper
  • 1 teaspoon black pepper

Method

  1. Heat olive oil and butter in a Dutch oven over low flame until melted.
  2. Add chopped onion and sauté until it turns soft and translucent, about 10 minutes.
  3. Dust the softened onion with flour, stirring constantly for about 5 minutes to create a roux.
  4. Gradually add vegetable broth and diced potatoes, bringing the mixture to a gentle boil.

  6. Stir in the corn, half-and-half, diced bell peppers, black pepper, and salt.
  7. Lower the heat and cook, stirring occasionally, until the corn is tender, about 8 minutes.
