This Sukhothai Inspired Noodle Stir-Fry features a delightful blend of flavors with tender noodles, scrambled eggs, tofu, and a tangy sauce, perfect for a satisfying dinner.


Ingredients

  • 3 tablespoons sugar
  • 2 tablespoons vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons tamarind pulp
  • 8 ounces rice noodles
  • 2 tablespoons oil
  • 3 cloves garlic
  • 2 large eggs
  • 1 cup tofu
  • 1/4 cup pad thai sauce
  • 1/4 cup crushed peanuts
  • 2 tablespoons ground radish
  • 1/4 cup chives
  • 1 teaspoon paprika
  • to taste none lime wedges
  • to taste none fresh bean sprouts

Method

  1. Start by preparing the sauce: In a medium saucepan over medium heat, blend together sugar, vinegar, soy sauce, and tamarind paste until well combined.
  2. Soak the rice noodles in cold water until they soften, then drain them well.
  3. Heat oil in a large skillet or wok over medium heat, then add minced garlic and beaten eggs, stirring continuously to scramble the eggs.
  4. Add in diced tofu and stir until everything is well mixed, then incorporate the drained noodles and cook until heated through.
  5. Stir in the pad thai sauce along with 1 1/2 tablespoons of sugar and 1 1/2 teaspoons of salt; mix thoroughly. Fold in crushed peanuts and ground radish, then remove the skillet from the heat.
  6. Finish the dish by adding chopped chives and a light dusting of paprika.
  7. Serve the stir-fried noodles hot, garnished with lime wedges and fresh bean sprouts on the side.
