Ingredients

  • 1/2 cup margarine
  • 1/3 cup cocoa powder
  • 2 large eggs
  • 1 cup sucralose sweetener
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 1/2 cup walnuts
  • 1 box sugar-free chocolate pudding mix
  • 1 cup skim milk

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan with a dusting of flour.
  2. In a small saucepan set over medium heat, melt the margarine and cocoa together, stirring until smooth. Once combined, take it off the heat and let it cool slightly.
  3. In a large bowl, whisk the eggs until they are airy and frothy, then blend in the sucralose sweetener until well mixed.
  4. In a separate bowl, combine the flour and salt, then gradually mix this dry blend into the egg mixture. Gently fold in the cooled cocoa and margarine mixture.
  5. Pour in 1/4 cup of milk and mix in walnuts if you like a bit of crunch. Transfer the batter to your prepared baking pan.
  6. Bake for 25 to 30 minutes in the oven. To test if they're done, insert a toothpick into the center; it should come out clean.
  7. For the topping, whisk together the sugar-free chocolate pudding mix with 1 cup of skim milk using an electric mixer for about two minutes until it thickens.
  8. Once the brownies have cooled, spread the pudding mixture evenly over the top before slicing them into squares.
