Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1/2 cup stevia
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • a pinch salt
  • 3 ripe bananas
  • 1/4 cup almond milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup pine nuts
  • 2 tablespoons flax seeds

Method

  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch loaf pan by greasing it well.
  2. In a large mixing bowl, mix together all-purpose flour, rice flour, stevia, baking powder, baking soda, and a small pinch of salt.
  3. In another bowl, mash ripe bananas thoroughly, then stir in almond milk, vegetable oil, and an egg, mixing until you achieve a smooth consistency.
  4. Carefully fold the banana mixture into the dry ingredients until just combined, then gently stir in pine nuts and flax seeds.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for approximately 60 minutes, or until a toothpick inserted in the center comes out clean.
