Ingredients
1 cup all-purpose flour
2 large eggs
1/4 teaspoon salt
1 1/4 cups milk
1 1/2 tablespoons butter
1 cup cottage cheese
1/2 cup cream cheese
1/4 cup sugar
1 teaspoon vanilla extract
1 cup fresh strawberries
Method
In a spacious bowl, combine flour, eggs, and a pinch of salt, whisking until the mixture is smooth. Gradually incorporate milk and 1 ½ tablespoons of melted butter. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
In a blender, mix cottage cheese, cream cheese, sugar, and vanilla extract until the mixture is creamy and well blended.
Heat a little butter in a skillet or crêpe pan over medium heat. Pour a small amount of the batter into the skillet and quickly tilt it to form a thin layer. Cook until the edges begin to set, about 30 seconds. Flip the crêpe and cook for another 10 seconds. Remove from the skillet and let cool on a plate. Repeat with the remaining batter and butter.
Once the crêpes have cooled, place a spoonful of the cheese filling on each crêpe and fold them over. Garnish with fresh strawberries before serving.
