A wholesome and delicious baked oatmeal dish featuring the sweetness of strawberries and the richness of peanut butter, perfect for a nourishing breakfast.
Ingredients
2 cups frozen strawberries
1/3 cup maple syrup
1/2 cup peanut butter
2 tablespoons butter
1 cup almond milk
2 large eggs
1 teaspoon vanilla extract
2 cups oats
1/4 cup flaxseed meal
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
Method
Preheat the oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish with nonstick spray.
Arrange frozen strawberries in the baking dish and drizzle them with a tablespoon of maple syrup.
Bake the strawberries for approximately 20 minutes, allowing them to soften and release their juices.
In a large bowl safe for the microwave, combine peanut butter and butter. Heat in the microwave on High for about 30 seconds until the butter is melted, then stir until smooth.
Mix in 1/3 cup of maple syrup, almond milk, eggs, and vanilla extract, whisking until the mixture is well integrated.
Gradually fold in oats, flaxseed meal, baking powder, cinnamon, nutmeg, and salt until everything is thoroughly combined.
Pour the oatmeal mixture over the softened strawberries in the baking dish, spreading it evenly.
Return the dish to the oven and bake for an additional 30 to 35 minutes, or until the center is firm to the touch.
Allow the dish to cool for 10 minutes before serving it warm.
