Deliciously sweet and crunchy strawberry oat crumble bars that make for a perfect treat any time of the day.


Ingredients

  • 2 cups strawberries
  • 2 tablespoons lemon juice
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 cup butter

Method

  1. Begin by preheating your oven to 375°F (190°C) and generously grease a 9x12-inch baking dish with butter.
  2. Remove the green tops from the strawberries and cut them in half, then dice them into small pieces.
  3. In a mixing bowl, combine the diced strawberries with lemon juice, sugar, and cornstarch, ensuring everything is thoroughly mixed. Set this fruity mixture aside.
  4. In another bowl, blend oats, all-purpose flour, whole wheat flour, brown sugar, salt, and a hint of ginger. Add melted butter and mix until the dry ingredients are well-coated.
  5. Take about 60% of the oat mixture and press it into the bottom of the prepared baking dish, spreading it evenly and compacting it slightly.
  6. Pour the strawberry mixture on top, using a slotted spoon to minimize excess juice. Do not press down on the strawberries. Sprinkle the remaining oat mixture over them and gently press it down.
  7. Drizzle any leftover strawberry juices on the surface of the bars.
  8. Bake for around 45 minutes, or until the top layer turns a lovely golden brown. After baking, gently press down on the top with a spatula to compact it. Let it cool completely for about an hour before slicing into bars and enjoying.
