Delicate and airy strawberry-infused meringue kisses that melt in your mouth, perfect for a sweet treat or a delightful snack.
Ingredients
3 tablespoons freeze-dried strawberries
4 large egg whites
1 cup granulated sugar
1 teaspoon cream of tartar
2 tablespoons milk powder
1 teaspoon vanilla extract
as needed none red gel food coloring
Method
Start by heating your oven to a low temperature of 200°F (95°C). Prepare a large piping bag with a round tip, placing it upright in a tall glass for easy filling.
Take freeze-dried strawberries and grind them in a food processor until they reach a fine powder consistency. Set aside 3 tablespoons of this strawberry powder for the meringues, keeping any extras for garnishing later.
Using a heatproof bowl over simmering water, mix the egg whites and sugar together. Whisk continuously for about 4 minutes until the sugar has completely dissolved. Then, transfer this mixture to a larger mixing bowl, adding cream of tartar. Begin mixing with an electric mixer on low speed until it becomes frothy, then increase to high speed until stiff peaks form and the mixture is glossy.
Gently fold in the reserved strawberry powder, milk powder, and vanilla extract until everything is nicely combined.
If you'd like, add a splash of red gel food coloring inside the piping bag for a fun design. Fill the bag with the meringue mixture, then secure the parchment paper on your baking sheet by placing small dots of meringue in each corner.
Pipe small mounds of meringue, roughly the size of a quarter, onto the baking sheet, ensuring they are spaced about an inch apart.
Bake the meringues in the preheated oven until they are firm to the touch and easily lift off the parchment, which should take about 60 to 75 minutes.
