A delightful eggless twist on the classic tiramisu, layered with luscious strawberry flavors and creamy textures for a refreshing dessert.
Ingredients
10-12 pieces strawberries
5 tablespoons sugar
1 piece lemon
8 ounces cream cheese
1 cup heavy cream
24 pieces ladyfingers
Method
Reserve 3 to 4 strawberries for garnish and slice the remaining strawberries into a bowl. Combine them with 2 tablespoons of sugar and the juice from 1 lemon. Allow this mixture to rest so the flavors can mingle.
Blend the leftover strawberries with 2 1/2 tablespoons of sugar and the remaining lemon juice until smooth.
Transfer the strawberry purée to a small saucepan and simmer on low heat, stirring often until it thickens to a sauce-like consistency, which should take about 5 to 10 minutes. Taste and adjust sweetness with additional sugar or add water if the mixture is too thick. Let it cool completely once done.
In a large mixing bowl, beat cream cheese with the remaining 2 1/2 tablespoons of sugar using an electric mixer until it's creamy. In a separate bowl, whip cream until soft peaks form, then carefully fold it into the cream cheese mixture.
Arrange ladyfingers tightly in a square glass baking dish. Drizzle half of the strawberry sauce over them, followed by half of the cream cheese mixture. Sprinkle half of the marinated strawberries over the cream layer. Repeat with the remaining ladyfingers, sauce, and strawberries. Top it all off with the rest of the cream mixture and garnish with the reserved strawberries.
Cover the dish with plastic wrap and chill in the refrigerator for at least 4 hours or preferably overnight to allow the flavors to develop.
