Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • a pinch nutmeg
  • 1/2 cup cold butter
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries

Method

  1. Preheat your oven to 325°F (165°C) and prepare a 9-inch square baking pan by lining it with parchment paper, leaving some overhang for easy removal later.
  2. In a large bowl, mix together flour, sugar, baking powder, salt, and a hint of nutmeg. Cut in cold butter until the mixture resembles coarse sand. Reserve 1 cup of this mixture to use as a topping.
  3. Add buttermilk, eggs, and vanilla extract to the remaining crumb mixture. Stir until just combined, being careful not to overmix. Gently fold in fresh strawberries.
  4. Pour the batter into the prepared pan, spreading it out evenly. Sprinkle the reserved crumb mixture on top, making sure it covers the batter well.
  5. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the cake to cool in the pan before lifting it out using the parchment paper. Cut into slices and enjoy!
