Ingredients
3 large eggs
1 cup granulated sugar
2 tablespoons water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup confectioners' sugar
1 tablespoon gelatin
2 tablespoons cold water (for gelatin)
2 cups strawberries
1 cup heavy cream
Method
Begin by preheating your oven to 375°F (190°C) and prepare a jelly roll pan by greasing it and lining it with greased parchment paper.
In a mixing bowl, whisk the eggs until they become thick and a light yellow shade. Gradually add in 1 cup of sugar while continuing to beat the mixture. Incorporate water and vanilla extract, then gently fold in flour, baking powder, and salt. Pour this batter into the prepared pan.
Bake the cake for approximately 15 minutes, or until it springs back when touched and begins to pull away from the pan's edges.
While the cake bakes, place a clean kitchen towel on the counter and dust it generously with confectioners' sugar. Once the cake is baked, carefully turn it out onto the towel, remove the parchment paper, and trim any rough edges if needed. Roll the cake up in the towel and allow it to cool completely.
In a microwave-safe bowl, sprinkle gelatin over cold water and set aside. Clean and hull the strawberries, slicing them if they're particularly large. Gently heat the gelatin in the microwave, stirring every 15 seconds until completely dissolved. Mix the melted gelatin with a tablespoon of sugar and pour it over the strawberries, tossing to combine.
Whip the cream until it reaches medium-stiff peaks. Fold the cooled strawberry mixture into the whipped cream gently. Carefully unroll the cooled cake, spread the strawberry cream evenly over it, and roll it back up tightly. Place the cake in the refrigerator for at least one hour to set.
Just before serving, dust the top of the cake with additional confectioners' sugar or add a dollop of whipped cream for an elegant finish.
