A delightful pie featuring a creamy cheese filling topped with a luscious strawberry sauce and fresh strawberries.
Ingredients
8 oz cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
1 whole pie crust
3/4 cup strawberries
2 tablespoons sugar
1 tablespoon water
1 tablespoon cornstarch
Method
In a large mixing bowl, whip the cream cheese with an electric mixer until it reaches a smooth and creamy consistency.
Slowly incorporate the powdered sugar into the mixture, then add the vanilla extract and mix until well blended.
Pour the creamy filling into the pre-prepared pie crust, smoothing it out evenly, and refrigerate for 15 to 30 minutes to set.
In the meantime, combine 3/4 cup of fresh strawberries with sugar, water, and cornstarch in a blender, blending until slightly smooth but still chunky.
Pour the blended strawberry mixture into a saucepan and heat over medium heat, stirring constantly until it begins to boil.
Once boiling, continue stirring for an additional 2 minutes to thicken the sauce, then remove from heat and allow it to cool for about 3 minutes.
After the pie has chilled, decorate the top with the reserved strawberries, then drizzle the thickened strawberry sauce over them.
Return the pie to the refrigerator and allow it to chill for at least 2 hours before slicing and serving.
