Ingredients
1 cup grams sugar
2 cups grams thawed strawberries
1/4 cup grams reserved strawberry juice
1/2 cup grams butter
2 cups grams flour
as needed tablespoons water
1/2 cup grams powdered sugar
8 ounces grams cream cheese
1 cup grams whipping cream
for garnish pieces fresh mint leaves
Method
In a heavy pot, combine sugar, thawed strawberries, and reserved strawberry juice over medium heat, stirring constantly until boiling. Remove from heat and let cool for 15 to 30 minutes, then refrigerate for 30 minutes until chilled.
Preheat your oven to 350°F (175°C) and lightly grease two mini muffin trays with 24 cups each.
In a mixing bowl, cut the butter into the flour until it resembles coarse crumbs. Gradually add water, one tablespoon at a time, until the dough comes together.
On a floured surface, roll the dough out until it is very thin. Use a large round cookie cutter to cut circles and gently press them into the greased muffin cups.
