Strawberry Butter Splash Biscuits

Deliciously fluffy biscuits bursting with fresh strawberries, drizzled with a sweet buttermilk glaze.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups buttermilk
  • 8 tablespoons butter
  • 1 cup fresh strawberries
  • 1 cup confectioner's sugar

Method

  1. Start by gathering all your ingredients and preheating your oven to a sizzling 450°F (235°C).
  2. In a sizable bowl, mix together the flour, baking powder, sugar, salt, and baking soda. Incorporate 2 cups of buttermilk and 3 tablespoons of melted butter, stirring gently until just combined, leaving some dry patches.
  3. Gently fold in the fresh strawberries, making sure they are well dispersed throughout the dough.
  4. Pour the remaining 5 tablespoons of melted butter into an 8-inch square baking dish, swirling to cover the bottom and sides. Spoon the biscuit dough into the dish, spreading it evenly. Use a knife to divide the dough into 9 squares.
  5. Bake in the preheated oven until the biscuits are golden brown, approximately 30 to 35 minutes. Check at the 20-minute mark and cover with foil if they start to darken too quickly.
  6. Once baked, take the dish out of the oven and let the biscuits rest for 5 minutes. Meanwhile, whisk together confectioner's sugar and 1 tablespoon of buttermilk in a small bowl until smooth. Drizzle this over the warm biscuits, slice, and enjoy right away.
