A delightful skillet cake bursting with fresh strawberries, perfect for a sweet treat or snack.
Ingredients
2 cups fresh strawberries
2 tablespoons sugar
1 splash lemon juice
1/2 cup butter
1 cup flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
a pinch salt
1 cup buttermilk
1 teaspoon vanilla extract
Method
In a medium bowl, combine fresh strawberries with 2 tablespoons of sugar and a splash of lemon juice. Allow this mixture to rest for about 10 minutes to deepen the flavors.
Preheat your oven to 350°F (175°C) and place a 10-inch cast iron skillet inside with some butter to melt.
In a large mixing bowl, whisk together flour, 1/2 cup sugar, baking powder, baking soda, and a pinch of salt until evenly combined.
Once the butter has melted, carefully remove the skillet from the oven, swirling the butter to coat the bottom. Pour the remaining melted butter into the flour mixture and let it cool down slightly.
Add buttermilk and vanilla extract to the flour and butter mix, stirring gently until no dry flour remains. Pour the batter back into the skillet, spreading it out evenly.
Spoon the strawberry mixture along with its juices over the top of the batter.
Place the skillet back in the oven and bake for 32 to 37 minutes, or until the center is just set. Allow it to cool for 5 minutes before serving. For the best taste, enjoy it warm.
