A delightful and refreshing pie filled with luscious strawberries and topped with whipped cream, perfect for warm days.


Ingredients

  • 3 tablespoons sugar
  • 2 tablespoons cornstarch
  • a pinch none salt
  • 1.5 cups water
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • a few drops none red food coloring
  • 2 cups fresh strawberries
  • 1 pre-made pie crust
  • 1 cup heavy cream
  • 2 tablespoons confectioners' sugar

Method

  1. In a medium saucepan, mix together sugar, cornstarch, and a dash of salt; then, slowly add 3 tablespoons of water to create a smooth paste.
  2. In another pot, bring the rest of the water to a rolling boil, then gradually mix it into the sugar paste. Let it simmer on low heat, stirring constantly until it thickens and becomes clear, about 5 minutes; then take it off the heat.
  3. Add in the lemon juice, almond extract, and a hint of red food coloring to the mixture, allowing it to cool for a minimum of 15 minutes.
  4. Gently mix in the fresh strawberries until they are fully coated, then transfer the mixture to a pre-made pie crust. Chill in the refrigerator for at least 1 hour to set.
  5. In a separate bowl, whip the heavy cream using an electric mixer until soft peaks form, gradually incorporating confectioners' sugar until smooth. Spread the whipped cream over the cooled pie just before serving.
