Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter
1 cup buttermilk
1 cup fresh strawberries
2 tablespoons fresh basil
2 tablespoons brown sugar
Method
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse meal.
Pour in 1 cup of buttermilk and stir gently until just combined. Optionally, fold in fresh strawberries and some chopped basil for a unique flavor.
On a floured surface, divide the dough into two equal portions. Shape each portion into a circle about 3/4 inch thick and cut each circle into 8 wedges.
Place the scone wedges on the prepared baking sheet, leaving about 2 inches of space between them. Brush the tops with 2 tablespoons of buttermilk and sprinkle with brown sugar.
