Ingredients
2 cups Fresh strawberries
3 tablespoons Sugar
1 tablespoon Balsamic vinegar
1 tablespoon Raspberry vinegar
a handful Fresh basil leaves
1 cup Heavy cream
1/2 cup Sour cream
4 ounces Cream cheese
1/2 cup Almonds
1/2 cup Crushed meringues
Method
In a mixing bowl, combine ripe strawberries, 2 tablespoons of sugar, balsamic vinegar, raspberry vinegar, and a handful of fresh basil leaves. Let this mixture sit for at least 15 minutes to allow the strawberries to absorb the flavors and release their juices.
In a chilled bowl, use an electric mixer to whip heavy cream until it becomes airy. Gradually add 1 tablespoon of sugar while continuing to mix until soft peaks form. Carefully fold in the sour cream and cream cheese until the blend is smooth and well integrated.
In a sturdy saucepan, create a thin layer of sugar at the bottom. Heat it over medium heat, adding more sugar gradually as it melts. Keep stirring until the mixture transforms into a lovely amber hue, indicating it has caramelized. Stir in the almonds, then remove from heat and pour the mixture onto a piece of parchment paper. Place another parchment sheet on top and roll it out with a pin. Allow it to cool fully before breaking it into crunchy pieces.
In four serving glasses, layer the marinated strawberries first, followed by the whipped cream mixture, and a sprinkle of crushed meringues.
