A delightful and refreshing dessert that layers marinated strawberries, fluffy whipped cream, and crunchy caramelized almonds, perfect for any special occasion.


Ingredients

  • 2 cups Fresh strawberries
  • 3 tablespoons Sugar
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Raspberry vinegar
  • a handful Fresh basil leaves
  • 1 cup Heavy cream
  • 1/2 cup Sour cream
  • 4 ounces Cream cheese
  • 1/2 cup Almonds
  • 1/2 cup Crushed meringues

Method

  1. In a mixing bowl, combine ripe strawberries, 2 tablespoons of sugar, balsamic vinegar, raspberry vinegar, and a handful of fresh basil leaves. Let this mixture sit for at least 15 minutes to allow the strawberries to absorb the flavors and release their juices.
  2. In a chilled bowl, use an electric mixer to whip heavy cream until it becomes airy. Gradually add 1 tablespoon of sugar while continuing to mix until soft peaks form. Carefully fold in the sour cream and cream cheese until the blend is smooth and well integrated.
  3. In a sturdy saucepan, create a thin layer of sugar at the bottom. Heat it over medium heat, adding more sugar gradually as it melts. Keep stirring until the mixture transforms into a lovely amber hue, indicating it has caramelized. Stir in the almonds, then remove from heat and pour the mixture onto a piece of parchment paper. Place another parchment sheet on top and roll it out with a pin. Allow it to cool fully before breaking it into crunchy pieces.
  4. In four serving glasses, layer the marinated strawberries first, followed by the whipped cream mixture, and a sprinkle of crushed meringues. Repeat these layers until the glasses are full, finishing with a topping of caramelized almond shards, extra meringue bits, and a few more strawberries for garnish.
