Ingredients
1 cup shredded coconut
1 cup tapioca flour
1 cup rice flour
1/2 cup arrowroot starch
1 cup coconut cream
1/2 cup sugar
2 medium mashed bananas
1/2 cup coconut milk
1 pinch salt
Method
Start by mixing shredded coconut with a small pinch of salt in a bowl and set it aside for later.
In a spacious mixing bowl, sift together tapioca flour, rice flour, and arrowroot starch. Slowly incorporate coconut cream while stirring continuously for about 10 minutes until the mixture is smooth. Add sugar and mix until it dissolves completely. Then, gently fold in the mashed bananas.
Next, pour in the coconut milk along with another pinch of salt, ensuring everything is well combined.
Transfer the batter to a square baking dish or individual aluminum cups, and sprinkle the reserved shredded coconut on top for added texture.
Prepare a steamer by placing a large basket in a pot filled with 1.5 inches of water, making sure the water does not touch the bottom of the basket. Bring the water to a boil, then carefully position the baking dish or cups in the steamer. Cover and steam for 20 to 25 minutes, or until the dessert is set and cooked through.
