Delightful cookies featuring zucchini and oats, perfect for celebrating St. Patrick's Day with a touch of sweetness and a hint of indulgence.
Ingredients
1/2 cup butter
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup (grated) zucchini
1 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup oats
1/2 cup granola
1/2 cup chocolate chips
Method
Preheat your oven to 350°F (175°C) to prepare for baking.
In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy. Add in the egg and vanilla extract, mixing well before folding in the grated zucchini.
In another bowl, whisk together the flour, baking soda, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, combining until just blended.
Gently incorporate the oats, granola, and chocolate chips, ensuring they are evenly mixed throughout the dough.
Using a tablespoon, drop mounds of dough onto an ungreased baking tray, leaving about 2 inches of space between each cookie. Bake for approximately 10 to 12 minutes, until they are soft and chewy, thanks to the zucchini.
