A delicious and nutritious quiche made with fresh spinach, creamy cottage cheese, and a touch of Cheddar, topped with crunchy croutons.


Ingredients

  • 1 cup spinach
  • 1/4 cup green onions
  • 4 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded Cheddar cheese
  • 1/2 cup crushed croutons
  • to taste none cooking spray

Method

  1. Start by preheating your oven to 325°F (165°C) and lightly greasing a 9-inch quiche or pie dish.
  2. In a small saucepan, heat the spinach over medium flame, stirring occasionally until it wilts. Be sure to drain any excess moisture.
  3. In a large mixing bowl, combine the wilted spinach with chopped green onions, eggs, cottage cheese, and shredded Cheddar cheese. Stir until everything is well mixed.
  4. Transfer the spinach and cheese mixture into the prepared pie dish.
  5. Bake the quiche uncovered in the preheated oven for 45 minutes. Afterward, remove it and sprinkle crushed croutons on top.
  6. Place the quiche back in the oven and continue baking for another 15 minutes, or until the egg mixture is completely set.
