Deliciously stuffed pasta shells filled with a creamy spinach and cheese mixture, topped with savory spaghetti sauce and baked to perfection.
Ingredients
12 pieces pasta shells
1 cup spinach
1 cup ricotta cheese
2/3 cup Parmesan cheese
1 teaspoon fennel
1 tablespoon fresh basil
2 cloves minced garlic
1/2 cup spaghetti sauce
to taste salt
to taste pepper
Method
Preheat your oven to 350°F (175°C).
In a large pot, bring salted water to a boil. Add the pasta shells and cook them until they're al dente. Drain and set aside.
Squeeze out excess moisture from the spinach and place it in a large mixing bowl. Add ricotta cheese, 1/3 cup of grated Parmesan, fennel, fresh basil, and minced garlic. Season with salt and pepper, and mix until well combined.
Spread half a cup of spaghetti sauce on the bottom of a 9x13-inch baking dish.
Fill each pasta shell with the spinach-cheese mixture and arrange them in the baking dish with the open side facing up. Pour the remaining spaghetti sauce over the stuffed shells and sprinkle the rest of the Parmesan cheese on top.
Cover the dish loosely with aluminum foil and bake in the preheated oven for approximately 30 minutes, or until everything is warmed through.
