This Spicy Tropical Jam combines the bold flavors of habanero peppers with sweet fruit for a uniquely flavorful spread that brings a kick to your breakfast or snack.


Ingredients

  • 1 whole habanero pepper
  • 2 cups apricots
  • 1 cup shallots
  • 1 whole green bell pepper
  • 1 whole red bell pepper
  • 1 cup crushed pineapple
  • 1 cup cherry tomatoes
  • 2 cloves garlic
  • 1 cup cilantro
  • 1 teaspoon cumin
  • 1/4 cup lime juice
  • 1 package pectin
  • 2 cups white sugar
  • 1 cup brown sugar
  • 1 tablespoon butter

Method

  1. Wear rubber gloves to protect your hands, then finely chop and remove the seeds from the habanero pepper.
  2. In a spacious pot on medium heat, mix together the minced habanero, diced apricots, shallots, green and red bell peppers, crushed pineapple, halved cherry tomatoes, minced garlic, chopped cilantro, cumin, and freshly squeezed lime juice.
  3. Add the pectin and stir until it's completely dissolved, then bring the mixture to a vigorous boil.
  4. Slowly incorporate the white and brown sugars, stirring continuously until they are fully dissolved.
  5. Return to a hard boil, adding a small piece of butter to reduce foam, and let it boil vigorously for 2 to 3 minutes while stirring constantly.
  6. After boiling, remove from heat and skim off any foam from the surface of the jam.
  7. Carefully pour the hot jam into sterilized jars, sealing each jar with a clean lid and ring.
  8. Process the jars in a boiling water bath for 10 minutes, then remove them and place them upside down on a clean towel for about 5 minutes.
  9. After they've cooled slightly, turn the jars back upright and listen for the popping sound as the lids seal. Allow the jars to cool completely before storing.
