Ingredients

  • 2 pounds Potatoes
  • 2 teaspoons Salt
  • 1 teaspoon Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Baking Soda
  • 2 tablespoons Oil
  • 2 cloves Garlic
  • 1 tablespoon Ginger
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Lime Juice
  • 1 tablespoon Tamarind Paste
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Black Pepper
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Vegetable Oil
  • 1 tablespoon Sriracha
  • 1 medium Red Onions
  • 1 medium Bell Peppers
  • 1 medium Jalapenos
  • 1 bunch Fresh Herbs
  • 1/2 cup Crushed Peanuts

Method

  1. Begin by placing the diced potatoes in a large saucepan. Add 2 teaspoons of salt, along with coriander, turmeric, and baking soda. Pour in enough water to cover the potatoes by about one inch. Bring to a gentle simmer and cook for approximately 10 to 15 minutes, until the potatoes are just tender. Drain thoroughly.
  2. Line a baking sheet with aluminum foil and generously coat it with 1 tablespoon of oil. Position the drained potatoes skin-side down on the sheet. Allow them to cool completely before covering and refrigerating until chilled.
  3. Preheat your oven to 475°F (245°C). Once hot, brush the tops of the chilled potatoes with the remaining tablespoon of oil and sprinkle with the last teaspoon of salt.
  4. Roast the potatoes in the oven for roughly 35 minutes, or until they achieve a golden brown and crispy texture. After roasting, let them cool to either warm or room temperature.
  5. In a small bowl, whisk together minced garlic, grated ginger, rice vinegar, lime juice, tamarind paste, fish sauce, salt, freshly ground pepper, brown sugar, vegetable oil, and Sriracha until everything is well combined. Set this zesty dressing aside.
  6. In a large mixing bowl, combine the crispy roasted potatoes with chopped red onions, diced bell peppers, sliced jalapenos, fresh herbs, and crushed peanuts. Drizzle the prepared dressing over the mixture and toss gently until everything is evenly coated. Serve right away on a serving platter or in a bowl.
