Ingredients
1 cup carrots
1 medium onion
1 large bell pepper
1 pound chicken breast
3 cloves garlic
4 cups chicken broth
1 can coconut milk
2 tablespoons curry paste
to taste salt
to taste pepper
8 ounces noodles
Method
Heat a generous splash of oil in a large pot over medium heat. Add in diced carrots, chopped onions, and sliced bell peppers, sautéing for approximately 3 minutes until they soften.
Incorporate the diced chicken into the pot, stirring to coat. Cook until the chicken starts to turn golden, then mix in minced garlic and continue cooking until the chicken is thoroughly cooked, around 5 to 10 minutes.
Pour in a rich chicken broth along with creamy coconut milk. Add curry paste, salt, and pepper, stirring well. Bring the mixture to a rolling boil, which should take about 5 minutes.
Once boiling, add the noodles to the pot and allow everything to bubble again. Then, reduce the heat and let it simmer gently for around 3 minutes.
Cover the pot and remove it from the heat. Let it sit for 5 to 10 minutes to allow the noodles to absorb the flavors and soften perfectly.
