A lively and flavorful Thai chicken dish that's marinated in a zesty blend of sauces and spices, then cooked to perfection in a rich, creamy peanut sauce.


Ingredients

  • 1/4 cup soy sauce
  • 3 cloves minced garlic
  • 2 tablespoons spicy chili sauce
  • 1 tablespoon fresh ginger
  • 1 pound chicken pieces
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 1 medium onions
  • 1/3 cup peanut butter
  • 2 stalks green onions

Method

  1. In a large mixing bowl, whisk together soy sauce, minced garlic, zesty chili paste, and freshly grated ginger until well blended. Add the chicken pieces, ensuring they are evenly coated, cover, and refrigerate for at least one hour to marinate.
  2. Once marinated, take the chicken out of the bowl, allowing any excess marinade to drip off, and set aside the remaining marinade for later use.
  3. Heat sesame oil in a Dutch oven over medium-high heat. Add brown sugar, stirring until it melts and combines with the oil, then toss in chopped onions and sauté for about 5 minutes until they are soft and translucent.
  4. Introduce the marinated chicken to the pot, cooking and stirring frequently until the chicken is golden brown, which should take approximately 5 minutes. Then, add the reserved marinade along with some water, bringing the mixture to a rapid boil.
  5. Lower the heat and let it simmer for 15 to 20 minutes. After that, stir in peanut butter and allow it to simmer for another 10 minutes, or until the sauce thickens to your desired consistency.
  6. Transfer the chicken to a serving dish, drizzling the delicious sauce over the top, and garnish with freshly chopped green onions.
