This spicy Tex-Mex chicken casserole combines a crunchy corn chip base with a creamy, flavorful chicken filling, topped with melted cheese for a comforting dinner dish.


Ingredients

  • 2 cups corn chip crumbs
  • 2 tablespoons butter
  • 1 medium onion
  • 1 can diced tomatoes
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can green chiles
  • 1 cup milk
  • 1 cup sour cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 2 cups cooked chicken
  • 2 cups shredded Cheddar cheese

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Create a solid base by evenly spreading corn chip crumbs in the baking dish and pressing them down.
  3. In a large skillet, melt some butter over medium-high heat. Add finely chopped onion and sauté until they turn soft and translucent, about 6 to 7 minutes.
  4. In a mixing bowl, stir together diced tomatoes, cream of chicken soup, cream of mushroom soup, green chiles, milk, sour cream, chili powder, and cumin. Fold in the cooked chicken and sautéed onions until well combined.
  5. Pour the chicken mixture over the corn chip base, ensuring an even layer, and top it off with a generous amount of shredded Cheddar cheese.
  6. Bake in the preheated oven for 55 to 60 minutes, or until the casserole is bubbling and the cheese is melted. Let it rest for 10 minutes before serving.
