Ingredients

  • 1 tablespoon butter
  • 1 medium onion
  • 1 medium bell pepper
  • 4 cups cabbage
  • 1 splash water
  • 2 cloves garlic
  • 1 teaspoon fresh thyme
  • 1 small Scotch bonnet chile
  • to taste salt

Method

  1. Begin by melting a knob of butter in a skillet over medium-high heat.
  2. Add chopped onion and bell pepper to the pan, sautéing them until they soften slightly, approximately 3 to 5 minutes.
  3. Stir in shredded cabbage along with a splash of water, minced garlic, and fragrant fresh thyme, then bring the mixture to a boil.
  4. Reduce the heat to medium-low, cover the skillet, and allow the cabbage to steam until it is tender, which should take around 8 to 10 minutes.
  5. Finally, stir in the diced Scotch bonnet chile, letting it warm through, and season with salt and pepper to taste.
