These Spicy Squash and Zucchini Burritos are filled with a flavorful medley of vegetables and spices, wrapped in soft tortillas and baked to perfection with melted cheese on top.
Ingredients
2 tablespoons olive oil
1 medium onion
2 cloves garlic
2 medium zucchini
2 medium yellow squash
1 large bell pepper
1 can black beans
1 cup green salsa
1 teaspoon cumin
1/4 teaspoon cayenne pepper
2 cups Mexican-style cheese
6 large tortillas
Method
Start by heating your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
In a large skillet, warm some olive oil over medium heat. Add diced onions and minced garlic, sautéing until the onions are soft and transparent, which should take around 5 minutes.
Add in the chopped zucchini, yellow squash, and diced bell pepper. Stir continuously until the zucchini and squash are nicely tender, roughly 10 minutes.
Stir in black beans, green salsa, cumin, and a dash of cayenne pepper. Mix thoroughly and let it simmer until the mixture thickens, about 5 to 8 minutes.
Lay out your tortillas and sprinkle a layer of Mexican-style cheese down the center of each one. Top with a generous scoop of the zucchini mixture.
Fold the sides of the tortillas over the filling and roll them tightly to create burritos. Place each burrito seam-side down in the greased baking dish.
Bake the dish in the oven for about 15 minutes, or until the cheese is bubbly and the burritos are heated through. Before serving, sprinkle the remaining cheese on top of the burritos.
