This spicy pepper medley is a vibrant and zesty relish perfect for adding a kick to your meals. Made with a blend of fresh chiles, bell peppers, and onions, it's easy to prepare and can be stored for weeks in the fridge or frozen for longer use.
Ingredients
10 pieces chiles
2 pieces bell peppers
1 medium onion
1 cup sugar
1 cup vinegar
2 tablespoons pickling salt
Method
Wear gloves to protect your hands, then carefully remove the stems from the chiles. Using a food processor, chop the chiles, bell peppers, and onion in batches until finely minced, which should take around a minute for each batch. Transfer this mixture into a large non-reactive pot.
Incorporate sugar, vinegar, and pickling salt into the pepper blend and bring the mixture to a boil. Once it's boiling, reduce the heat to medium and allow it to simmer. Stir frequently as it thickens, for about 20 to 30 minutes.
Carefully ladle the hot relish into clean, wide-mouthed jars, leaving about half an inch of space at the top. Use a damp paper towel to wipe the rims of the jars to ensure a good seal.
After filling, let the jars cool at room temperature for approximately one hour before sealing them with lids. Store the jars in the refrigerator for up to 3 weeks or freeze for up to 6 months.
