Ingredients

  • 2 medium onions
  • 3 pounds pork roast
  • 2 tablespoons salt
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon red pepper flakes
  • 12 ounces ginger beer

Method

  1. Begin by placing thinly sliced onions at the bottom of your slow cooker.
  2. In a bowl, mix together salt, brown sugar, smoked paprika, black pepper, garlic powder, and a dash of red pepper flakes until well combined. Rub this spice blend generously over the pork roast, ensuring it's fully covered. Position the roast in the slow cooker with the fatty side facing upwards.
