Ingredients
1 pound chicken breast
4 cups cooked rice
1 medium bell pepper
1 medium onion
3 cloves garlic
2 units Serrano peppers
3 tablespoons oyster sauce
1 tablespoon fish sauce
1 teaspoon sugar
1 cup fresh basil
2 tablespoons cooking oil
1 medium cucumber
1/4 cup fresh cilantro
Method
Gather and prepare all ingredients before you start cooking.
In a mixing bowl, blend together oyster sauce, fish sauce, and a sprinkle of sugar until well combined, then set it aside.
Heat a generous amount of oil in a wok over medium-high heat until it shimmers, then add minced garlic and sliced Serrano peppers, stirring rapidly.
Introduce diced chicken, bell pepper, and onion to the wok, then pour in the sauce mixture. Cook until the chicken is cooked through and no longer pink.
Increase the heat to high and add in cold, pre-cooked rice. Stir well to combine everything, using the back of a spoon to break apart any rice clumps.
After everything is well mixed, take the wok off the heat and gently fold in fresh basil leaves. Serve with slices of cucumber and fresh cilantro on top.
