A delicious and colorful medley of okra and tomatoes, spiced to perfection and simmered to tender goodness. Perfect as a side dish or a light main course.
Ingredients
1 tablespoon olive oil
1 medium onion
2 cloves garlic
1 pinch cayenne pepper
1 medium green bell pepper
2 cups frozen okra
1 can stewed tomatoes
1 can diced tomatoes
to taste salt
to taste black pepper
Method
Begin by heating a drizzle of olive oil in a frying pan over medium heat, making sure the surface is evenly coated.
Add in diced onions, minced garlic, and a dash of cayenne pepper; sauté until fragrant, about 1 minute.
Stir in chopped green bell pepper and cook until it softens, which should take around 5 minutes.
Introduce the frozen okra to the pan and allow it to cook for another 5 minutes.
Combine both stewed and fresh diced tomatoes into the skillet, then season generously with salt and freshly cracked black pepper.
Reduce the heat to medium-low and let the mixture simmer until all the vegetables are tender and heated through, approximately 5 to 7 minutes.
