1 pound ground lamb
2 cloves minced garlic
3 stalks green onions
1 medium diced chili pepper
1 cup sweet peas
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon ground cumin
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons fresh mint
1 large egg
1 tablespoon water
20 pieces wonton wrappers
2 tablespoons butter
Method
In a large bowl, mix together ground lamb, minced garlic, chopped scallions, diced chili, sweet peas, salt, pepper, cayenne pepper, and cumin. Use two forks to thoroughly combine the ingredients. Cover the bowl with plastic wrap and let it chill in the refrigerator for 3 hours, or overnight for a richer flavor.
For the dipping sauce, combine rice vinegar, soy sauce, and freshly chopped mint in another bowl. Mix well and refrigerate until it's time to serve.
In a small bowl, whisk an egg with a little water to make an egg wash. Take a wonton wrapper and brush the edges with the egg wash. Place 2 to 3 teaspoons of the lamb filling in the center, fold the wrapper over, and press the edges tightly to seal, ensuring all air is removed. Repeat this with the remaining wrappers and filling, letting them rest for about 10 minutes.
Heat butter in a skillet over medium heat. Fry the dumplings in batches for approximately 3 minutes on each side until the meat is fully cooked and the dumplings are golden brown. Serve them hot with the prepared dipping sauce.
