Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion
  • 1 medium red bell pepper
  • 2 medium tomato
  • 2 cloves garlic
  • 1 can black beans
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 cup cilantro
  • 2 cups brown rice

Method

  1. In a medium saucepan, heat olive oil over medium flame. Add diced onion, chopped red bell pepper, half of the diced tomatoes, and minced garlic. Cook until the onion is soft and translucent, approximately 5 to 10 minutes.
  2. Incorporate black beans, water, salt, chili powder, paprika, and black pepper into the sautéed vegetables. Allow the mixture to simmer for around 10 minutes until everything is warmed through.
  3. Remove the saucepan from the heat and stir in freshly chopped cilantro and the remaining diced tomatoes for a fresh touch.
  4. Serve this vibrant bean mixture atop a generous portion of fluffy brown rice.
