Ingredients

  • 2 cups corn kernels
  • 1 cup water
  • 1/4 cup cornmeal
  • 1/2 cup sugar
  • 1/4 cup margarine
  • 1/4 cup masa harina
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method

  1. In a blender, mix together 1 cup of sweet corn kernels with water and cornmeal until the mixture is creamy and smooth.
  2. In a medium-sized bowl, cream together sugar, margarine, and masa harina until light and fluffy. Slowly incorporate the blended corn mixture.
  3. Mix in the remaining cup of corn, milk, baking powder, and salt until everything is well combined and silky.
  4. Pour the batter into the upper part of a double boiler set over gently simmering water, and cover tightly with aluminum foil.
  5. Steam the corn mixture for approximately 50 to 60 minutes, checking the water level in the boiler occasionally to prevent it from drying out.
  6. Before serving, stir the pudding well for a consistent texture. Scoop and serve in small bowls.
