Ingredients

  • 2 pieces salmon fillets
  • 1 cup crab meat
  • 1 cup shrimp
  • 1/2 cup mushrooms
  • 2 tablespoons mayonnaise
  • 1/4 cup Parmesan cheese
  • 1 tablespoon lemon juice
  • 2 tablespoons green onions
  • 1/2 cup bread crumbs

Method

  1. Start by gathering all your ingredients. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet with cooking spray.
  2. Carefully cut a pocket into the center of each salmon fillet, slicing about two-thirds deep into the flesh.
  3. In a mixing bowl, blend together crab meat, shrimp, chopped mushrooms, mayonnaise, grated Parmesan, a splash of fresh lemon juice, diced green onions, and bread crumbs to make the stuffing.
  4. Shape two generous portions of the seafood mixture on the prepared baking sheet. Open the salmon fillets and place one on top of each mound. Fill the pockets of the salmon with any leftover stuffing.
  5. Sprinkle your favorite seafood seasoning over the filled fillets and transfer the baking sheet to the oven. Bake until the salmon is fully cooked and flakes easily, which should take about 30 minutes.
