A delightful blend of sweet potatoes and cake mix that creates a unique dessert, perfect for sharing with family and friends.
Ingredients
2 cups sweet potatoes, drained
0.5 cups melted butter
1 can sweetened condensed milk
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice
1 box dry cake mix
4 tablespoons cold butter
0.5 cups chopped pecans
Method
Start by preheating your oven to 350°F (180°C) and prepare a 9x13-inch baking dish by greasing it lightly.
In a large bowl, mix together the drained sweet potatoes, half a cup of melted butter, sweetened condensed milk, a dash of vanilla extract, and a hint of pumpkin pie spice. Use an electric mixer to blend until smooth with a few sweet potato chunks remaining.
Spread the sweet potato mixture evenly in the greased baking dish. Sprinkle the dry cake mix over the top, then add small dots of cold butter on the surface. Optionally, incorporate chopped pecans for added texture.
Bake in the preheated oven for around 45 minutes, or until the top turns golden brown and the cake is firm in the center. Let it cool in the pan for about 20 minutes before slicing. Serve warm, with optional toppings of whipped cream or ice cream.
