These delicious taco cups combine the sweetness of roasted sweet potatoes with hearty black beans, all wrapped in a crispy tortilla. Perfect as a snack or appetizer, they are topped with creamy avocado and zesty lime crema for an irresistible flavor.


Ingredients

  • 12 pieces tortillas
  • 2 medium sweet potatoes
  • 1 medium onion
  • 1 piece jalapeño
  • 2 cloves garlic
  • 1 can black beans
  • 1 cup cheese
  • 1 piece avocado
  • 1/4 cup cilantro
  • 1 piece lime
  • 2 tablespoons cooking oil
  • to taste none salt
  • to taste none black pepper

Method

  1. Preheat your oven to 350°F (175°C) and lightly coat 12 muffin tins with cooking spray.
  2. Carefully press a tortilla into each muffin cup, shaping it to form a firm base.
  3. In a skillet, heat oil over medium-high heat. Add diced sweet potatoes and sauté for about 10 minutes until tender.
  4. Add chopped onions to the skillet and cook until they turn translucent, about 2 to 3 minutes.
  5. Incorporate minced jalapeño and garlic, cooking for an additional 2 minutes until fragrant.
  6. Mix in black beans, seasoning with salt and freshly ground black pepper to taste.
  7. Evenly distribute the sweet potato and black bean mixture into the tortilla cups, filling them generously.
  8. Sprinkle a good amount of cheese on top of each cup.
  9. Bake in the oven for 15 to 20 minutes, or until the cheese is melted and the filling is bubbling.
  10. Once baked, garnish each taco cup with avocado slices and fresh cilantro. Serve with lime wedges and a drizzle of lime crema.
