This hearty stovetop pot roast is a comforting dish, perfect for family dinners. It features tender beef cooked slowly with a medley of vegetables, creating a rich and flavorful broth.
Ingredients
4 pounds beef roast
enough to cover liquid water
2 stalks celery
4 cloves garlic
1 medium onion
1 teaspoon dried basil
to taste none salt
to taste none pepper
2 medium turnips
3 medium potatoes
3 medium carrots
Method
In a spacious pot or Dutch oven, warm up some oil over medium-high heat. Once it's hot, carefully add the roast and sear it until all sides are nicely browned.
Pour in sufficient water to completely cover the roast. Mix in chopped celery, minced garlic, diced onion, dried basil, salt, and pepper. Bring this to a boil, then lower the heat to let it simmer gently for 2 hours and 15 minutes, adding more water as needed to keep the roast submerged.
After the initial simmering period, introduce chopped turnips and potatoes into the pot. Let it simmer for an additional 15 minutes.
Next, add in sliced carrots and continue to simmer for another 30 minutes, or until the roast is tender and can be easily shredded with a fork.
Before serving, taste the broth and adjust the seasoning with salt and pepper to your preference.
