3 pounds beef roast
1/4 cup flour
2 large onions
3 medium carrots
2 stalks celery
4 cloves garlic
1 teaspoon allspice
1 cup red wine
2 cups beef broth
2 tablespoons cornstarch
2 tablespoons water
Method
Heat a generous splash of oil in a robust cast iron pot over medium heat.
Dredge the beef roast in flour, shaking off any excess, and brown it thoroughly on all sides in the hot oil.
In the same pot, add diced onions, carrots, celery, minced garlic, and a dash of allspice; sauté until they begin to caramelize.
Deglaze the pot with a generous pour of red wine and allow it to simmer before incorporating beef broth.
Reduce the heat, cover the pot tightly, and let the roast simmer slowly until the meat becomes fork-tender, approximately 2 to 3 hours.
After cooking, move the beef to a cutting board and allow it to rest for about 10 minutes.
In the meantime, combine cornstarch with a little water to create a slurry for thickening the cooking liquid.
