Ingredients
2 tablespoons oil
1 pound sausage
1 medium onion
4 cups water
1 package jambalaya mix
1 can diced tomatoes with chile peppers
Method
In a spacious cooking pot, heat the oil over medium-high flame. Add in the sausage and diced onion, sautéing until the sausage gets a golden brown hue and the onion turns soft and translucent, which should take roughly 7 to 10 minutes.
Pour water into the pot, then mix in the jambalaya seasoning and the diced tomatoes with chilies. Raise the heat until the mixture begins to boil. Once boiling, reduce the heat, cover the pot, and allow it to simmer until the water is nearly absorbed and the rice is cooked through, about 25 minutes.
