Ingredients

  • 2 cups Pinto beans
  • 4 slices Bacon
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Bell pepper
  • 1 medium Jalapeño
  • 1 cup Beer
  • 1/2 cup Barbecue sauce
  • 1/4 cup Brown sugar
  • 2 tablespoons Molasses
  • 1 teaspoon Garlic salt
  • 1/2 teaspoon Black pepper

Method

  1. Start by preheating your oven to 375°F (190°C) and lightly greasing a 9x13-inch baking dish with butter.
  2. In a large skillet, heat some oil over medium-high heat. Add diced onions and minced garlic, cooking until the onions turn translucent, roughly 5 to 7 minutes.
  3. Incorporate diced bacon, bell peppers, and jalapeños into the skillet. Cook until the bacon is crispy, which should take about 7 to 10 minutes.
  4. In a separate bowl, whisk together beer, barbecue sauce, brown sugar, and molasses. Stir in pinto beans along with the cooked bacon and vegetable mixture, seasoning with garlic salt and black pepper. Mix until everything is thoroughly combined.
  5. Pour the bean mixture into the prepared baking dish, spreading it out evenly.
  6. Bake in the hot oven until the top is golden brown and the mixture is bubbling, about 45 minutes.
