This savory potato and bacon casserole combines tender potatoes and crispy bacon layered with creamy cheese and onions, creating a comforting dish perfect for any dinner table.

4 pieces whole potatoes
6 ounces diced bacon
1 cup sliced onions
to taste none kosher salt
to taste none black pepper
a pinch none cayenne pepper
1/4 cup white wine
1 piece wheel of cheese
1 cup crème fraîche
Method
Start by boiling whole, unpeeled potatoes in a pot of salted water. Once the water reaches a boil, lower the heat and let the potatoes simmer for about 15 to 25 minutes, or until a knife can easily pierce them. After simmering, remove the potatoes and allow them to cool.
Preheat your oven to 375°F (190°C).
In a skillet, cook diced bacon over medium to medium-high heat until it is fully cooked but not too crispy, which should take around 5 to 7 minutes. Once done, transfer the bacon to one side and soak up some extra fat with a paper towel. Then, add sliced onions, seasoning with kosher salt, black pepper, and a hint of cayenne pepper. Sauté until the onions are soft and golden, approximately 6 minutes. Pour in white wine to deglaze the pan, cooking for another 2 minutes before removing from heat.
Cut a wheel of cheese into two semi-circles, and then slice each half into two more semi-circles, ensuring that each piece has a rind side and a creamy side.
Once the potatoes are cool enough to handle, peel off the skins and slice them into thick rounds, about 1/3 inch in thickness.
In a 2-quart shallow baking dish, layer just over half of the potato slices at the bottom, slightly overlapping them. Lightly sprinkle salt over the potato layer. Evenly distribute the bacon and onion mixture on top. Add the remaining potato slices over this mixture, overlapping them as needed. Spread a generous layer of crème fraîche over the top, and place the cheese pieces on top with the rind side facing upwards.
Place the baking dish on a baking sheet and transfer it to the oven. Bake for 45 to 50 minutes, or until the top is golden brown and the potatoes are tender.
