These savory pork rice bites are a delightful snack or appetizer, featuring juicy ground pork enveloped in tender sticky rice, steamed to perfection and garnished with goji berries.
Ingredients
2 cups sticky rice
1 large egg
1 tablespoon grated ginger
2 tablespoons soy sauce
1/2 teaspoon salt
1 pound ground pork
2 tablespoons cornstarch
1/4 cup pork stock
for garnish goji berries
Method
Start by rinsing the sticky rice under cold water until the water runs clear, then soak it in water for at least 3 hours before draining.
In a spacious mixing bowl, whisk an egg and mix in grated ginger, soy sauce, and a pinch of salt. Add ground pork, cornstarch, and pork stock, and stir the mixture in one direction for 5 to 6 minutes until well blended.
Form the pork mixture into small balls that are about the size of a bite.
Fill a wok with water to about an inch deep and bring it to a gentle simmer.
Take the soaked sticky rice and coat each pork ball thoroughly, ensuring they are completely covered. Place 6 rice-encrusted balls in a steamer basket.
Put the steamer basket into the wok and steam the balls for around 30 minutes, or until the pork is fully cooked and the rice is soft. Once finished, remove the balls and garnish with goji berries for a touch of flavor and decorative appeal.
