Ingredients
1 cup uncooked rice
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon cumin
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon oregano
2 tablespoons olive oil
1 can canned beans
1 cup salsa
2 cups vegetable broth
Method
Preheat your oven to 350°F (175°C).
In a large baking dish, mix uncooked rice with chili powder, salt, cumin, black pepper, cayenne pepper, and oregano. Drizzle with olive oil and stir thoroughly to coat the rice evenly.
Incorporate the beans, salsa, and vegetable broth into the rice mixture, stirring until all ingredients are well combined. Cover the dish tightly with aluminum foil.
Bake in the preheated oven for about 1 hour and 10 minutes, or until the rice is soft and fully cooked.
