Ingredients
4 pieces lamb chops
2 tablespoons olive oil
3 cloves minced garlic
2 tablespoons fresh rosemary
to taste teaspoon salt
to taste teaspoon black pepper

Method
Preheat your oven to 425°F (220°C) to prepare for roasting.
Trim the lamb chops of excess fat, leaving some on for added flavor, and lightly drizzle them with olive oil.
Season the chops generously with minced garlic, fresh rosemary, a pinch of salt, and freshly cracked black pepper. Arrange the seasoned chops in a cast iron skillet.
Roast the lamb chops in the preheated oven for 8 to 10 minutes, or until they reach an internal temperature of at least 140°F (60°C) for a medium-well finish.
Once cooked, carefully remove the skillet from the oven and cover the chops with aluminum foil. Allow them to rest for 8 to 10 minutes to enhance the flavors.
Serve the herb-infused lamb chops with a side of refreshing mint jelly.
